Extraction of the enzyme, bromelain, from pineapple peels was investigated. Bromelains were extracted from peels of pineapples and were partially purified by ultrafiltration using hollow fiber module. Bromelain activity was determined by two methods, i.e. (1) clear zone-forming method and (2) free amino acid-releasing method. Two species of pineapples were compared in yield and specific activity of bromelain. The results indicated the yield and specific activity were far different between these two species of pineapples.
