  • Abstract In Taiwan, the ostrich farming is mainly for edible meat supply, in addition, its own production or export of ostrich eggs, feather, expensive ostrich and other by-product.
     In recent years, use ostrich subcutaneous fat extraction oil in skin care product as a foundation.
     Ostrich oil has higher levels of unsaturated fatty acids than any other animal oil and even has higher levels of vitamin-E.
     The internal organs of ostrich are often discarded, but there is not significantly different with the percentage of unsaturated fatty acid between organs and subcutaneous fat, even the organs contain EPA and DHA that as much as fish oil does.
     Traditional oil extraction often extract oil by organic solvent or heating, but this might not only cause the solvent residual, peculiar smell, and too much impurity but also has less levels of unsaturated fatty acids in its extracted oil.
     Supercritical carbon dioxide extraction need not to add organic solvent and by the anaerobic purification extraction without contacting with air would not cause the oxidative rancidity.
     In addition, the temperature of supercritical carbon dioxide extraction is close to room temperature, there’s not any damaging effects to heat-sensitive nutrients.
     This research, the first, compare fat and internal organs that was lyophilized with in-lyophilized then respectively use supercritical carbon dioxide extraction method to extract the ostrich fat and internal organs, with different requirement to compare their yield, acid value, peroxide value and fatty acid composition, then select the best extraction condition to apply.
     According to the results of fats and internal organs that were lyophilized in two different extraction condition, in 60℃, 400bar has better extraction rate and more unsaturated fatty acid, but there were nothing different with that were in 65℃, 300bar, even in 65℃, 400bar has higher levels of unsaturated fatty acid, and has more EPA than fish oil has; and contains a unique Lauric acid(dodecanoic acid) that may apply for medical or food industry.
